An allergy is a hypersensitivity reaction of the body’s immune system to harmless substances (allergens). This can lead to problems and complaints of the stomach and intestines, and in severe cases to an aphylactic shock and sometimes even death.
Celiac disease is not an allergy to food hypersensitivity, but an autoimmune disease triggered by the ingestion of gluten. The immune system turns against the body itself. Celiac disease only occurs in people with a hereditary predisposition. In the Netherlands, about 1 in 100 people has celiac disease. At present, a lifelong, strict diet is the only treatment for people with celiac disease.
The Dutch Celiac Association (NCV) has been committed to helping people with celiac disease since 1974. In order to offer consumers who are on a gluten-free diet a safe choice, the NCV licenses producers and suppliers for gluten-free products. This license is linked to the Crossed Grain gluten-free quality mark. To apply for the Crossed Grain quality mark, the producer must be in possession of a Gluten-Free Certificate
European associations for celiac patients, that are committed to helping people with celiac disease, have joined forces: the Association of European Celiac Societies (AOECS). The Dutch NCV is also a member of the AOECS. A joint certification scheme has been drawn up for the certification of gluten-free producers, production processes and foodstuffs.
